Serves: 4-6 people Time : 15 min
500 ml of mango pulp (can be bought in Indian food shops) or fresh mango
500 ml chilled full fat fresh curd/yoghurt or coconut milk
sugar or honey as required (optional)
½ teaspoon cardamom powder or ½ tablespoon rose water or a pinch of saffron strands
a few mint leaves for garnish, and/or fresh mango cubes
In a blender or mixer mix the mango or mango pulp with yoghurt or coconut milk, add sugar or honey and cardamom powder or saffron or rose water. Blend for some seconds till smooth.
If you use fresh mango blend well before adding the yoghurt.
Pour mango lassi in glasses and serve it garnished with mint leaves or cubes of mango or drizzle some drops of cream on top. If you want a slightly thin consistency, then add some milk or water to the mango lassi while blending.
Homemade almond milk is so easy to make and is a very tasty alternative to dairy milk.
Recipe for 1 liter of almond milk
150 g raw almonds
1 l spring water
1 pinch of vanilla powder
2 tablespoons agave nectar, 4 dates (cut up into very small pieces) or any natural sweetener (optional)
Soak the almonds overnight for 10 to 12 hours, rinse and place them in the blender or the food processor. Mix them with water at the highest speed for 2 minutes. Filter the mixture through a fine-mesh nut bag or cheesecloth and press out the liquid with your hands.
Add vanilla and the optional ingredients and mix well in high speed blender.
Almond milk can be refrigerated for up to two days.

Recipe for 1½ l of juice
10 small apples
2 big fennels
1 orange or 1 lemon (peeled)
1 small piece fresh ginger
1 teaspoon spirulina powder
Place apples, fennels, orange or lemon, and the small piece of fresh ginger in a juice extractor. Then add one teaspoon of spirulina powder to the juice. Mix well and enjoy!

1 small Victoria pineapple (or 1/2 pineapple)
1 celery stalk
1 handful spinach
1 big kale leaf (or 2 small leaves)
1 tablespoon goji berries
(You can also add a little water or coconut water if you wish: about 125 ml).
Blend all ingredients in a high speed blender until smooth and enjoy!
