A delicious apple recipe especially for summer and autumn afternoon treats and desserts.
Serves: about 20 apple hearts
Time: 1 hour preparation time, 1 hour dough resting time, 15-20 minutes baking time
1 apple, peeled
1 tablespoon of finely grated orange peel (preferably of untreated oranges)
400 g flour
1 tablespoon baking soda
130 g brown sugar
100 g butter
1 vanilla pod
1 handful raisins
1 piece butter
3 tablespoons brown sugar
1 pinch cinnamon
100 g almonds
Mix the apple with the orange peel preferably in a blender so you get a smooth mixture.
Mix the flour with the baking soda and then add the rest of the ingredients for the dough.
Knead the dough until it is smooth and even.
Leave it to rest for an hour in the refrigerator wrapped in cling film.
Soak the raisins in water.
Grate or chop the apples very finely then put them in a pan with a bit of butter, brown sugar and cinnamon and cook for 7-8 minutes.
Grind the almonds in a blender and add to the apple mixture and raisins.
Roll out the dough until it is 3 mm thick and then cut it into circles with a cookie cutter or a glass about 8 cm in diameter.
Use half of the dough circles as bases and place a teaspoon of the mixture on each one.
Next place another circle over the top to act as a lid and seal the edge by pressing it together with a fork.
Put the cookies on an oven tray with baking paper and bake in oven at 180° C / 356° F for 15-20 minutes.
